Minty Chia Fresca

A wonderfully refreshing drink. I really like Chia Fresca, especially with the fresh mint leaves. It is super hydrating, perfect for hot summer days and for long endurance runs, rides and intense workouts.

In Mexico chia seeds are often stirred into fruity drinks where they turn gelatinous and add a nice texture to the beverage. This fiesty Latin drink has many health benefits: It is known to be a “super food” as it contains protein, fibre and omega 3 fatty acids. Chia Fresco is the quickest, easiest and most delicious way to get some chia seeds into your diet.

Makes 1 liter

Ingredients

2 tablespoons chia seeds
4 large limes, juiced
Handful of fresh mint leaves, crushed
10-15 clementine
4 tablespoons Agave Nectar or honey
1 liter water

Prepare the Lemonade

Pour 1 liter water into a pitcher. Slice the lemons and squeeze the juice in the water. Add the sweetener (Agave nectar or honey). Mix well. Taste and adjust the sweetness level to your liking.

After the lemonade is ready, add the chi seeds. Stir well and let sit for 10 to 15 minutes. During this time, chia will absorb the water and become gelatinous. Stir occasionally if the seeds are floating or falling to the bottom.

Now add the crushed mint leaves and clementine to the lemonade. Keep in the refrigerator to chill for some time. At the time of serving, top with ice cubes and a sprig of fresh mint.
