Green Tea and Yogurt Parfait

A delicious and healthy start to your day. Extremely versatile Greek yogurt when combined with blueberries, toasted almonds, flax seed and goji berries transforms into a super food and an instant energy booster. Easy to assemble, make-ahead and ideal for a grab-and-go healthy breakfast. The good thing about parfait is that you can spruce it up with any fresh seasonal fruit of your choice and you are all set for the day.

In today’s busy lives when there simply isn’t enough time in the morning to prepare a healthy, nourishing breakfast, this on-the-run, protein packed option is a life saver. A calcium filled treat with the added benefit of antioxidant filled green tea and blue berries boosts metabolism and burns calories!

1 1/2 cups Greek yogurt
1 teaspoon Matcha Green Tea powder
3 tablespoon ground flax seed
1 1/2 tablespoon honey or maple syrup
1/2 teaspoon pure vanilla extract
1 cup fresh blue berries or fruit of your choice
2 tablespoons toasted almonds
1 teaspoon goji berries

Whisk together Greek yogurt and green tea matcha powder in a small jar. Add vanilla extract and mix well. Spoon half cup yogurt into each glass, top with few blue berries, almonds and goji berries. Repeat the layers with remaining berries and almonds.  Enjoy straight away or you can put the assembled parfait in the refrigerator for about an hour or so to chill before eating.

This parfait has excellent ration of healthy fat and lean protein. You can add carbs too with whole grains like toasted oats or granola. It will keep you full for a very long time.
